Are the debug symbols (and source) available for EPiServer Commerce?

I don't think so, you will find you have to use Reflector a lot when using Commerce, definitely a few bugs and issues in the code.

The new version of Reflector integrates with Visual Studio and you can step into dll's, but like you say, without the debug symbols you can't really look at all the variable content.
